Chicken Cacciatore – A great winter recipe

This recipe is healthy and the kids will love it! Serves 2-3 people

Ingredients

  • 1 whole chicken
  • 2 red capsicum (diced)
  • 2 punnets of cherry tomatoes (cut in half)
  • 200g of pitted green olives
  • 60g of capers
  • 100g of shallots (cut in half)
  • 2 tablespoons of olive oil
  • Sea salt to taste
  • 1 bunch parsley

Method

  1. Preheat oven to 220 °C
  2. Clean the chicken; remove the spine and the wings, cut the breast and leg into two pieces each
  3. Add half of the olive oil and chicken pieces to a heavy based roasting pan with the skin side down
  4. Roast the chicken in the oven for 3-7 minutes or until golden
  5. Turn the oven down to 150°C
  6. Add the capsicum and cherry tomatoes to the pan and cover with a lid and cook for one hour
  7. After the first hour, add the shallots, green olives, and capers, and cook for another 2 hours covered with a lid
  8. After the total of three hours in the oven the chicken will be nice and tender, finish with some fresh parsley, a drizzle of olive oil, and a sprinkle of sea salt.
  9. Sprinkle some parsley over to serve
